Amaranth green leaves are a leafy green vegetable with a mild, slightly earthy flavor that’s similar to spinach. Amaranth leaves are tender and smooth, and average 15 cm in length. They are also called as chaulai or Keerai and found wide usage in curries, stews, and mixed vegetable dishes. Amaranthus is a staple in the Indian diet and is considered a superfood because it’s high in protein and has a well-balanced amino acid profile. Amaranth can be grown throughout the year in India. It grows well in hot Indian summers.
