Red amaranth, also known as Lal Saag or Chaulai Saag, is a nutritious leafy vegetable that is a popular ingredient in Indian cooking. Red amaranth has a flavor similar to beets. Red amaranth leaves can be cooked, stir-fried, or eaten raw.  The leaves of the red amaranth plant are green when young and turn purplish-red as the plant matures. Red amaranth can grow in almost all climatic conditions, except severe cold. It grows best in light, well-drained soil rich in organic matter.
